Ripe ruby red color and good intensity. The sweet and pulpy red fruit marries with sweet spices to leave room for notes of officinal and delicately spiced herbs. Full and fulfilling. The body of excellent structure finds in the acid push the right complement to its harmony, resulting soft but equally agile on the palate. Ideal with stews and braised meats with polenta, game, sliced beef with porcini mushrooms, lamb ribs and medium-aged cheeses

Vinification and Aging: The harvest is done manually, and varies according to the vintage, between the last ten days of September and the first of October. The yield per hectare is 70 quintals. As soon as they reach the cellar, the grapes are rasped and pressed to carry out the alcoholic fermentation in stainless steel containers for 10 to 12 days. After the alcoholic fermentation, the wine is separated from the skins and stored in steel tanks until January. In that month the dried Amarone grapes are pressed. Once the fermentation of the Amarone is finished, the marcs are immersed in Valpolicella for a period of 7/8 days Aging for 12 months partly in tonneaux and partly in 20-hectolitre barrels
