PINOT NERO CASTELLO DELLA SALA ANTINORI 2016
Produced exclusively from Pinot Noir grapes since 1990, it is, in a certain sense, the "alter ego" of Cervaro: together they represent the two different expressions of the complex and refined soul of the Castello della Sala. The 4 hectares of vineyards from which it is produced are located at over 400 meters above sea level. on calcareous soils rich in fossils with sands of sedimentary origin dating back to the Pliocene. Pinot Noir finds at Castello della Sala, the historic land of whites, an authentic and typical expression, capable of telling the profound territorial character. The 4 hectares of Pinot Noir vineyards run along the hill, dividing into terraces, drawing sinuous and soft lines. The particular climate of the Castello della Sala forced agronomists to devise a way to protect the grapes from the summer sun. The shoots are stretched and folded over the plant so that the leaves can shade the bunches of Pinot Noir.
