SAUVIGNON LA TUNELLA 2018
Although Tunella is a reality with a well-established history, they have never abandoned the obsessive attention that distinguishes every small winemaker when working in his vineyard. The company philosophy is “to do little to do better”: only in this way can we offer something of excellent quality and at the same time absolutely unique and personal. The Sauvignon de la Tunella grapes are harvested at the right degree of ripeness, a part of the destemmed and crushed grapes is softly pressed; the other part, on the other hand, is previously subjected to cryomaceration at 4 ° C for about 36 hours. The must thus obtained is statically cold decanted and subsequently added with a fermentation foot previously prepared (3-4 days before) with the best selected grapes of the same vine. It is then subjected to a slow fermentation in stainless steel tanks at a strictly controlled temperature (16 ° C) which lasts for about 30-40 days. The maturation continues in steel tanks where a long series of batonnage at gradual frequency also takes place, in order to obtain a complex, structured and delicately perfumed wine. We will wait until February for bottling. It presents itself to the nose with an intense and persistent typically varietal aroma. Aromas of great intensity and finesse stand out, with typically vegetal sensations of sage and tomato leaf, which are mixed with more fruity and delicate notes such as melon and yellow pepper. Freshness and aromas that we find in the mouth, to enhance a fresh and dry taste, in a perfect balance. Intense and enveloping, it closes with a long aromatic persistence. It is an aperitif and appetizer wine. It goes well with lobster, lobster, scampi, salmon and saltwater fish. Also excellent with creams and soups, risottos and dishes with aromatic herbs
