SOAVE CLASSICO DAL CERO 2021
Soave is a wine-growing denomination of a geographical area located east of Verona: the Corte Giacobbe estate is a few kilometers from the town of Soave, resting on the coast of the ridge of the Roncà valley. The vineyards surrounding the ancient Corte Giacobbe are located on the slopes of the two extinct volcanoes, Calvarina and Crocetta: soils in general of volcanic origin, composed of lava and tuff, rich in microelements. In the vineyards owned by the estate, the vines of Garganega, Chardonnay and Pinot Grigio are grown under the careful care of the Dal Cero family. The particular geological history characterically influences the mineral and organic constitution of the berries, determining the marked aromatic and mineral characteristics of the grapes and a pleasant flavor of the wine. Specifically, the Cru di Corte Giacobbe wines are the fruit of the vines grown on the top of the volcano, in a soil characterized by a high presence of minerals. Straw-yellow view with greenish reflections. Varied olfactory range: ripe melon and yellow orange, jasmine and chamomile accompanied by a vegetable of rosemary and mountain hay. The classic Soave is a pleasant, enveloping and balanced wine; the melon and citrus fruits persist with a fresh and savory finish, accompanied by a dried almond. Strong minerality due to the valley of origin. A pleasant wine even between meals as an aperitif, ideal pairing with first courses, white meats, fish and vegetables
