LE DIFESE TENUTA SAN GUIDO 2020
Le Difese di Tenuta San Guido is a red wine that contaminates the local soul of the Sangiovese grape, with the Bordeaux reminder of Cabernet Sauvignon, masterfully bred in the Bolgheri area from the noble cellar, on soils with a strong presence of limestone areas rich in marl, stony and partially clayey, up to 300 meters above sea level.
The vinification of Le Difese begins with the soft pressing and de-stemming of the grapes. Fermentation takes place spontaneously in steel vats at a controlled temperature. Maceration on the skins is 9-12 days for Cabernet Sauvignon and for about 15-18 days for Sangiovese, with subsequent pumping over of the musts to sweeten the tannins. Malolactic fermentation carried out in steel. The aging lasts 12 months in French and American second passage oak barrels, to complete the maturation 3 months in the bottle.
