SAUVIGNON "PEPI" TRAMIN 2020
Tramin "Pepi" is a pure Sauvignon from two hilly areas, one opposite the other on the slopes of the valley. The vineyards are located at an altitude between 450 and 550 meters above sea level, thus being alternatively exposed in a privileged way to the warm rays of the sun. The soils are calcareous, determined by a clayey and gravelly conformation. The strong temperature variations existing between day and night are an excellent prerequisite that brings finesse and aromatic precision to the grapes. After the harvest, the grapes are transported to the cellar, where they are softly pressed. The must obtained is left to ferment in steel containers, without following the alcoholic fermentation with the malolactic one. A period of rest on its lees in large oak barrels for about 8 months makes the wine ready for marketing
