Vinification and Aging: The meticulous harvesting of the grapes carried out exclusively by hand is followed by a natural fermentation in wood, which takes place separately for each grape variety, after which the wine is assembled, then left to refine in barriques for 10 months, after which is bottled. However, before being placed on the market, it still undergoes a few months of refinement in the bottle.
