PROSECCO DI VALDOBBIADENE SUPERIORE BRUT COLLALTO 2021
The name "San Salvatore" derives from the hill on which the homonymous castle stands. In the highest part of the hill, well ventilated and where the soil is more rocky, is the vineyard from which they harvest the grapes for the Brut.
A fruity and fragrant Brut, which rests on the lees for four long months, as per tradition, and gives us a creamy and subtle bubble that immediately makes you happy.
Brut is the sparkling wine for great occasions, which the Counts of Collalto uncorked to inaugurate the great party at the Castle of San Salvatore and toast at the beginning of the agricultural season.
The vinification begins with the pressing carried out in a soft way, followed by the static decantation of the must and the subsequent fermentation in thermo-conditioned tanks at a controlled temperature (18 ° C). Aging and resting on the noble lees take place in steel for a period ranging from 3 to 6 months. After a long period of resting on the lees, following the second fermentation, the wine is filtered and bottled. Aging in autoclave for 4 months, then in the bottle for 1-2 months.
This Prosecco represents the version most anchored to the territory of origin and the most natural interpretation of the characteristics of the Glera grape. At sight it has a beautiful straw yellow color with light greenish reflections, demonstrating its great freshness. The perlage is persistent, elegant and regular and explodes in a dense and lively foam. On the nose, its characteristics of fragrance reveal notes of freshly ripe Golden apple and Williams pear, on a delicate and pleasant floral background. On the palate, its freshness dominates, without ever overpowering, over the other gustatory sensations in an absolutely noteworthy persistence and complexity.
Excellent as an aperitif, it goes well with fish appetizers, delicate fried fish, soups and vegetable-based risottos.
