PROSECCO DI VALDOBBIADENE SUP BRUT NATURE "OTTAVIANO" 2021
Ottaviano was produced with an "ancient method", whose pioneer was Count Ottaviano Antonio, also called the "farmer count" who, with a farsighted vision, laid the foundations for what will be modern enology.
Prosecco "on the lees" represents the origins of today's sparkling prosecco, a vision that a few enlightened men had over 100 years ago.
On the palate it opens with a lively bubble and with fruity and fresh hints and then opens up to the notes of dry pastries.

Vinification and Aging: A soft pressing is followed by fermentation with natural sugars and indigenous yeasts in thermo-conditioned steel tanks at a controlled temperature (16°C).
The second fermentation takes place in the bottle as for the classic method. This is followed by a rest period of 90 days in which the yeasts release the precious mannoproteins into the wine which cause the wine to soften and keep naturally for many years. At the end of the fermentation the "degorgment" is not carried out and the yeasts still inside the bottle give the sparkling wine a light haze. The bottles, during this period, are kept in the dark in the cellar. The presence of a haze in the wine is the typical feature of this refermentation in the bottle.
