ASTI SPUMANTE DOLCE "RIFREJ"
The family farm was founded by Secondino Barbero in 1963, taking advantage of his experience in the wine sector. The first vinification, dated back in 1988, is due to the sons Massimo and Marco. The new and modern winery in Neive was then built between 1995 and 2000. The Barbero brothers' motto has always been to produce sweet wines and sparkling wines with passion thanks to the strong link with the Langhe area. The company has 12 hectares of vineyards located between 300 and 450 meters above sea level close to a ridge that extends into the municipalities of Mango and Neive, a land that produces ripe and healthy grapes thanks to the excellent exposure to sunlight (south-east) and an area that falls within the DOCG Moscato d'Asti "Canelli" (of which includes only 18 municipalities in the provinces of Asti and Cuneo). The vineyards slide into a valley called Riofreddo, the stream from which it takes its name "Rifrej": an inscription that, in Piedmontese, recalls the wild and uncontaminated and at times inhospitable nature, rich in woods of acacias, oaks and lime trees where the presence is alive of deer and other wild animals. The tradition and essentiality in the treatments, the constancy and the method of processing allow us to bring a grape that reflects the scents and characteristics of a unique land to the cellar.
The sweet wine born in 2019 from the selection of ripe Muscat grapes to rediscover the tastes and aromas of the past. Its cheerful foam brightens the atmosphere of any party and the toast is also intriguing as an aperitif, cocktail and after a meal.
The vinification takes place with the destemming of the grapes and cold maceration with the skins for a few hours and subsequent pressing. White vinification with second fermentation in autoclave with the addition of selected yeasts for about 20 days. At the end of the processing, stabilization is carried out with refrigeration, then microfiltration and subsequent bottling. Aging: in the bottle for a few months
It has a bright straw yellow color with delicate greenish reflections, a fine and persistent foam. The nose is intense, clear with notes of citrus, white flowers (acacia and lime), peach, honey and caramel. Full, balanced, sweet but fragrant on the palate, thanks to its marked acid content with a pleasant bitter aftertaste. Ideal combination with dry pasta, desserts based on light fruit and cream, panettone, hazelnut cake. Very pleasant as an aperitif.
