It is in 1600 that we find the origins of the Bara family near Bisseuil, Oiry and Chouilly. In 1833, Auguste François Bara, a robust and lively young man, arrived in Bouzy to begin his career as a cooper. 3 years later, in 1836, he married Annonciade Robert who already owned some vineyards.
The house was built in 1860. If at the beginning it was a farm with stable, stable, sheepfold and cellar, the barn was transformed into a press and cellar in 1965. Pioneer of the marketing of the homonymous brand, Paolo Bara, the father de Chantale, was the first of the dynasty to sell Champagne in his name in the 1950s. A man of character and conviction, he regularly said, in memory of Chantale, "you have to keep the fields in order to eat". In 1975 the Maison Bara distinguished itself by becoming one of the first to cross the Atlantic to export to the United States ... Today this innovation continues and above all still with the same American importer. Paul Bara champagne cuvées are also present on 5 continents. It was in 1980 that Chantale joined his father to assist him and quickly became co-manager in 1986. 6th generation, he continued to strive for excellence; in particular being a member, and also president for 4 years, of the Club Trésors de Champagne, and starting in 2013 major renovations of the cellar to gain volume and precision during winemaking.

Paul Bara's "Reserve" Champagne is a great expression of Bouzy's best characteristics. At the end of the delicate pressing, fermentation takes place in steel tanks. The vins clairs rest for a few months before creating the final cuvée and the second fermentation takes place in the bottle according to the Champenoise Method, with a rest on the lees for at least 24 months.
It has a clear color with golden yellow reflections. Fine and abundant bubbles, nice cord. on the nose aromas of ripe and fleshy fruit, dominated by mirabelle plum, followed by spices and honey and accentuated by notes of candied fruit, bergamot and orange peel. Very fruity and fresh on the sip, body and power, yellow peaches, light peppery note.
