Vinification and Aging: Soft pressing of whole grapes and skin maceration in the press.

Aging 20 months in bottle in contact with the lees for over 24 months, with frequent "coupe de poignée" to enhance the olfactory complexity.

Perfect to drink with: Raw fish, shellfish, oily fish.
