ETNA M.CLASSICO BRUT BLANC DE BLANCS "GAUDENSIUS" FIRRIATO
The recognition of the qualities of a soil and the in-depth knowledge of the vine-land interaction are the keystone of the work that Firriato has carried out in all its estates. Especially, in Cavanera Etnea, where it produces Gaudensius Blanc de Blancs, a classic method sparkling wine born from the vinification of Carricante and Chardonnay, white berried grapes. The Carricante grapes, endemic and typical of Etna, come from the Cavanera Etnea estate, while the Chardonnay is an expression of the hills of a cru of the Borgo Guarini vineyard, in the Trapani countryside, where its grapes lend themselves well to a process of sparkling wine like the ones raised in the Champagne area. Gaudensius Blanc de blancs, therefore, represents the perfect synthesis between two different terroirs but belonging to the same island.
The vinification starts with the soft pressing of the whole grapes and fermentation at a controlled temperature, refermentation in the bottle. Refinement in the bottle follows in the presence of yeasts for over 32 months, after putting on the tip and disgorging.
Firriato's Gaudensius is a golden straw yellow colored sparkling wine. The nose is fresh, elegant and complex with notes of white fruits, acacia flowers, hazelnuts, and honey enhanced by excellent mineral notes. On the palate it is delicate, elegant and concentrated, expresses pleasant hints of great finesse, is characterized by an exceptional permanence on the palate and a good aromatic persistence.
