ETNA M.CLASSICO BRUT BLANC DE NOIR "GAUDENSIUS" FIRRIATO
Firriato's "Gaudensius" Brut Blanc de Noirs Classic Method is a perfect combination of vines that have their roots in volcanic soils and the mountain climate that only Etna can offer. The evocative glass of the famous and centuries-old Nerello Mascalese sparkling white in the cellar of Cavanera on Etna is an example of absolute style. The sparkling process takes place according to the "blanc de noir" method to enhance the organoleptic characteristics of Nerello Mascalese. After the soft pressing of the non-stemmed bunches, the vinification takes place inside the cellar obtained in the typical Etna beam dating back to the seventeenth century.
The vinification takes place with the soft pressing of whole grapes and fermentation at a controlled temperature and refermentation in the bottle according to the "classic method". This is followed by aging in the bottle in contact with the yeasts for over 32 months with frequent “coupe de poignèe” to favor the olfactory complexity.
Gaudensius is a sparkling wine that has a pale straw yellow color tending to bright gold characterized by a refined, fine-grained perlage. Intense and fruity nose with delicate notes of Sicilian citrus, brioche, anise and mineral hints. The sip complex flavor, with a good structure and at the same time of remarkable elegance, with a long sapid and mineral persistence with a nice finish of currant and almond.
