FRANCIACORTA BRUT "CONTE AYMO" MONTENISA ANTINORI 2018
The Montenisa estate is located in the heart of Franciacorta, around the Borgo di Calino. In this land of great wines, vines have always been cultivated. Some say that "Franciacorta" originates from "Petite France", an affectionate name that Charlemagne gave it.
2016 was a great vintage in Franciacorta, characterized by optimal daily temperature variations during the maturation; these climatic conditions have favored the maximum expression of the aromatic complexity of the grapes and guaranteed an excellent wine structure.
The vinification begins with the whole bunches of Pinot Noir which, harvested manually, were directly subjected to a soft pressing and the 'flower' must, obtained from the first pressing, was transferred to stainless steel tanks where the first fermentation took place alcoholic at controlled temperature. In the spring of the following year, the wine began the second fermentation process in the bottle, remaining in contact with the yeasts for a long period.
Conte Aymo 2016 has a bright straw yellow color; the foam is creamy and characterized by a fine and persistent perlage. On the nose it stands out for its typical variety, with pleasant sensations of red berried fruits. On the palate the characteristic notes of Pinot Noir give harmony, elegance, complexity and balance.
The Pinot Noir, which distinguishes this wine, gives it structure and complexity. Ideal accompaniment to both fish and meat dishes of medium and high gustatory intensity.
