The Blanc de Blancs sparkling wine is a Franciacorta that comes from the vineyards of the Montenisa Estate, purchased in 1999 by the Antinori family. The historic Tuscan wine brand thus wanted to expand its properties with a presence in one of the most important districts for the production of the Classic Method. Montenisa is located in Cazzago San Martino, in the eastern area of the Franciacorta area, and cultivates about 60 hectares divided into numerous plots located in different areas. In addition to Chardonnay and Pinot Nero, it has preserved a good patrimony of Pinot Bianco vineyards, once very present in Franciacorta, but which has been gradually abandoned over the last few decades. The vineyards remain the heart of the company and all production starts with a raw material of the highest level. The style has remained intact over time with elegant and refined Franciacorta, always characterized by a great freshness.
From the vineyards of Tenuta Montenisa in the heart of Franciacorta, the best Chardonnay grapes with a small part of Pinot Bianco give life to an elegant cuvée with refined freshness. The vinification in steel, followed by the maturation of at least 24 months on the lees gives the wine a floral and lively profile, of great balance and delicate finesse. The 'free run' must was subjected to the first alcoholic fermentation in stainless steel tanks. The second fermentation in the bottle in contact with the yeasts took place in the following 24 months.
It has a pale yellow color, a creamy froth with a fine and persistent perlage. The nose is fragrant and immediate, with floral and fruit notes that recall apple and white-fleshed peach. On the palate it is characterized by its liveliness and freshness accompanied by a good balance and a marked elegance.
Excellent to combine during appetizers, aperitifs or fish-based first courses. Its marked freshness also makes it perfect for a pleasant after dinner.
