FRANCIACORTA BRUT MOSNEL
The white gold goblet has a subtle and velvety perlage. The fine aromatic profile of the floral notes of elderberry and hawthorn gives delicate nuances to the freshness of the fruit, between Mediterranean citrus fruits and white and yellow fruit, with notes of aromatic herbs and almonds. The sip has joyful proportions of freshness and fruit with a persistent finish, which tends to be refined and harmonious.

Vinification and Aging: In white, in pneumatic press with separation of the 1st and 2nd pressing. After 12 hours of decantation at 15° C, inoculation of selected yeasts for fermentation partly in temperature-controlled stainless steel tanks and partly in small oak barrels. Malolactic fermentation and racking precede the assembly of the Cuvée which, after the addition of the "draught syrup", is bottled in spring.
The stacked bottles remain at least 24 months in the cellars before the "remuage". Subsequently disgorged and dosed "Brut" receive the mushroom cap and the cage. Finally, at least two months of further aging is necessary before placing this Franciacorta on the market.
Perfect to drink with: Fish tartare, first courses with seafood, crustaceans and appetizers.
