FRANCIACORTA BRUT SATEN "DONNA CORA" MONTENISA- ANTINORI 2015
The Montenisa estate is located in the heart of Franciacorta, around the Borgo di Calino. In this land of great wines, vines have always been cultivated. Some say that "Franciacorta" originates from "Petite France", an affectionate name that Charlemagne gave it.
Tenuta Montenisa's “Donna Cora” Classic Method expresses all the richness and variegated facets of Chardonnay grapes vinified in purity. Franciacorta Satèn of particular prestige.
The whole bunches are directly subjected to a soft pressing. The 'flower' must, that is the one obtained from the first pressing, was subjected to the first alcoholic fermentation which took place in stainless steel tanks and in small barriques. Towards the spring of the following year, the wine began the second fermentation process in the bottle and subsequent contact with the yeasts for a period of 60 months.
At sight it has a light yellow color, intense and brilliant, with golden reflections and is characterized by a creamy foam and a delicate and persistent perlage typical of saten. On the nose it expresses a bouquet with a refined character, with floral aromas of hawthorn, orange blossom flowers, aromas of pear, green apple, white peach, hints of bread crust, small pastries and pain brioche giving sensations of apmiezza and great balance. The sip is complex and enveloping, with a soft and creamy sip, ample and ripe aromas, perfectly balanced by a finish characterized by a pleasant sapidity and a lively white mineral freshness are the characteristic notes of its captivating perfume that gives the nose sensations of amplitude and great balance.
Particularly suitable to be consumed as an aperitif, accompanied with small appetizers, pasta dishes with fish, baked fish and white meats.
