FRANCIACORTA PAS DOSE' "RISERVA 33" FERGHETTINA 2012

Riserva 33 is an “assemblage of assemblage”, the base wine before the second fermentation, in fact it is composed of 33% each of the saten, milledi and extra brut bases. The total number of vineyards assembled in this wine is about 40 different plots located in 8 municipalities of Franciacorta.

Whole cluster grapes are pressed with a pneumatic press at very delicate pressures. During the vinification the musts are separated into two fractions: must, which has the best qualitative characteristics and which is used for the production of Franciacorta and second pressing must that is not intended for bottling. Alcoholic fermentation is carried out in steel tanks at a controlled temperature between 16 and 18 ° C. The base wine rests in the tank until the spring following the harvest.

It has a golden yellow color with a fine and persistent perlage. The nose is immediately characterized by great freshness and cleanliness and gives pleasant notes of cedar and mandarin, hawthorn and apple. The sip maintains the aromas and is very elegant and decisive with notes of candied fruit and ripe fruit.
