FRANCIACORTA PAS DOSE' MOSNEL
It takes at least 30 months in the silence of the seventeenth-century cellars of Mosnel for the Chardonnay, Pinot Bianco and Pinot Nero grapes to express
all their harmony in the Pas Dosé.
In the brilliant glass with shades of gold and a delicate and persistent perlage, the aromatic profile is characterized by
vital freshness of cedar and white peach, fragrant notes of wild herbs and lemon blossom, with the taut and lively energy that anticipates a dry and sharp sip, dynamic in the fresh and sapid notes, with a persistent and harmonious finish.

Vinification and Aging: White vinification in pneumatic press with separation of the 1st and 2nd pressing. After 12 hours of decantation at 15° C, inoculation of selected yeasts for fermentation partly in temperature-controlled stainless steel tanks and partly in small oak barrels.
Malolactic fermentation and racking precede the assembly of the Cuvée which in spring, after adding the "draught syrup", is bottled, capped with a crown cap and laid down in a stack for the second fermentation.
The stacked bottles remain 30 months in the rooms of our cellars before the "remuage".
Subsequently disgorged and dosed with the same wine, they receive the mushroom cap and the cage. Finally, at least three months of further aging are necessary before placing this Franciacorta on the market.
Perfect to drink with: Fish tartare, first courses with seafood, crustaceans and appetizers.
