PROSECCO DI VALDOBBIADENE SUP. BRUT JEROBOAM BORTOLOMIOL
The number one of Bortolomiol's traditional DOCG sparkling wines. The Roman numeral on the capsule and the name “Prior” remind us of how Bortolomiol was the first to guess and create this Brut sparkling wine when Prosecco di Valdobbiadene was still only Extra Dry. Prior is the symbol of the pioneering spirit of Giuliano Bortolomiol who believed in Prosecco di Valdobbiadene (today Valdobbiadene Prosecco Superiore Docg) and in the Martinotti - Charmat or Italian method of sparkling wine making.
The dark gray of the bottle recalls the color of the sky during winter, thunderstorms, the smell of heavy rains. Giuliano Bortolomiol, following his own happy intuition, succeeded in the 1960s in obtaining this unique dry sparkling wine from Valdobbiadene grapes.
The vinification takes place in white by soft pressing; primary fermentation at controlled temperature with selected yeasts. Then follows a second fermentation for 25-30 days and aging from 1 to 3 months.
It has a straw yellow color; the aromatic spectrum highlights cleanliness and finesse. Very clear and fragrant are the notes of fruit, especially green unripe apple and citrus, accompanied by fresh vegetal scents. The agile and immediate gustatory development is essential and dry. Due to its freshness, it is well suited as an aperitif wine, with seafood and with dishes dressed with extra virgin olive oil such as fish salad. Also excellent with lard croutons.
