On the occasion of the foundation anniversary of the winery, Bortolomiol has created the new Rive 70th Anniversary Valdobbiadene Prosecco Superiore DOCG: a limited edition sparkling wine, produced in only 8000 bottles. It comes from grapes from a single vineyard in Santo Stefano di Valdobbiadene, which enjoys a perfect and unique exposure to the sun, in the Brut Nature version, which enhances the extreme characteristics of a difficult area to cultivate, where everything is "done by hand" . This sparkling wine is the symbol of a goal reached, of the path traced by Giuliano Bortolomiol, back in 1949, which the daughters Maria Elena, Elvira, Luisa and Giuliana, together with their mother Ottavia, continue to follow in full respect of family values and sustainability. environmental and social.
Valdobbiadene D.O.C.G. Prosecco Superiore Brut Nature - Millesimato Rive di Santo Stefano is a wine that has obtained the gold medal "Decanter 2020". The vinification takes place in white by soft pressing; primary fermentation at controlled temperature with selected yeasts. Then follows a second fermentation for 25-30 days and aging on the lees for 3 months; it follows from 1 to 2 months of refinement in the bottle.
It has a straw yellow color with marked greenish reflections with a fine and persistent perlage. Fine and elegant olfactory notes reminiscent of the floral ones of jasmine and Robinia pseudoacacia (Black locust) with fruity nuances of green apple. On the palate an excellent creaminess and enveloping with linear and harmonic freshness.
The personal tactile complexity leaves free initiative in creating gastronomic marriages with risotto with wild herbs but also seasonal seafood.
