PROSECCO DI VALDOBBIADENE SUP. EX DRY "SENIOR" BORTOLOMIOL
The Senior is the Valdobbiadene Prosecco Superiore Docg par excellence, the Latin name is understandable to everyone even at an international level as the name "Prosecco". For many years the Prosecco di Valdobbiadene sparkling wine was known only as Extra Dry due to its natural sweetness and residual sugar. Today, that Bortolomiol has in its traditional line 4 flavor variations of Valdobbiadene Prosecco Superiore Docg, the number "II" on the capsule indicates that it is the second in gradation from the driest to the most sweet, while the Senior name recalls its birthright .
Its balanced dose of residual sugars and its enveloping aromas give it softness and great usability. It is a wine for all occasions: to be drunk with friends at the bar, as an aperitif but it is in the kitchen that it finds its greatest exaltation. Try it with vegetable soups and, why not, with fried brains where on the one hand the residual sugars respect the sweetness of the dish and on the other hand the freshness together with the carbon dioxide well control and balance the greasy sensations.
The dark orange of the bottle recalls the sun and the heat of summer, the colors of the sunset, the intangible memories of the earth dried by the wind emerge. The vinification takes place in white by soft pressing; primary fermentation at controlled temperature with selected yeasts. Then follows a second fermentation for 25-30 days and aging from 1 to 3 months.
The “Senior” Bortolomiol Prosecco Valdobbiadene shines in the flute with its pale straw yellow mantle, furrowed by a rich and persistent perlage. On the nose it expresses elegant and fruity notes of candied citrus fruits, white flowers, balsamic herbs and fresh almonds. On the palate it is soft and very balanced, marked by an explosive freshness and crossed by slightly sweet fruity aromas and fine and lively bubbles, of exquisite workmanship.
