PROSECCO DI VALDOBBIADENE SUP. EX DRY COL VETORAZ 2020
Col Vetoraz is located in Santo Stefano di Valdobbiadene on the top of the homonymous hill, part of the famous Cartizze hills. We are on the highest point of the Cartizze area at almost 400 m above sea level, from here the gaze can recognize the entire area, bounded to the east by the locality of Fol and to the west by the locality of Sacol. The Miotto family settled on this hill in 1838, developing the cultivation of vines from the very beginning (Valdobbiadene DOCG and Valdobbiadene Superiore di Cartizze DOCG).
Prosecco di Valdobbiadene Superiore Extra Dry is born on the steep hills of Valdobbiadene, where the native Glera grape has been cultivated for centuries. The mountains protect the Valdobbiadene area from cold winds coming from the north and the considerable temperature variations between sunny days and cool nights, favor the ripening of grapes with intense aromatic features. The Col Vetoraz extra dry offers the experience of a sparkling wine with a pleasantly simple taste, very suitable to drink at the time of an aperitif or with light appetizers. The velvety freshness and the delicate fruit are the secret of its perfect gustatory harmony. In the glass it has a straw yellow color, with a delicate and subtle froth. The bouquet recalls aromas of white flowers, acacia and orange blossom, aromas of white peach, pear and green apple. The sip is creamy, with a great balance between fruity aromas and mineral freshness, which ends with savory notes typical of the terroir.
The vinification takes place in white with soft pressing; static decanting and fermentation at a controlled temperature; second fermentation for 30 - 40 days. Refinement for 1 - 3 months follows. The method of sparkling wine originates from the second fermentation in a large container "Charmat Method".
