PROSECCO DI VALDOBBIADENE SUPERIORE EX DRY COLLALTO 2021
The Bosco del Gaio, from the Lombard "Gahagi" - banned and reserved land, is located halfway up the hill of San Salvatore and faces south. The forest has always been a great source of wealth for the community which finds timber, game and delicious fruit there. This beautiful grove, which bordered the crops and vineyards, was reserved for the Lords of the Castle; Count Rambaldo VIII already went hunting there and the berries, mushrooms and delicious chestnuts that enriched the banquets of the castle were gathered there.
A precious place reserved for a select few, like our Gaius, a harmonious and refined prosecco with its aromas of acacia and elderberry flowers.
Vinification begins with the pressing carried out in a soft way, followed by the static decantation of the must and the subsequent fermentation in thermo-conditioned tanks at a controlled temperature (18 ° C). Aging and resting on the noble lees take place in steel for a period ranging from 3 to 6 months. After a period of rest on the lees, following the second fermentation, the wine is filtered and bottled. Aging in autoclave 1-2 months, then 1-2 months in the bottle.
It is the version universally requested by the markets, the one which, respecting the ampelographic characteristics of origin, satisfies the modern needs of the consumer's taste, directed towards ever softer products. At sight it shows a pale straw yellow color. Its perlage is fascinating and persistent. Its bouquet, ample and delicate, recalls freshly ripe white fruit, with apple prevailing, and very subtle floral tones. Its acidity balances the impact of sugars and the overall structure of the wine, making it decidedly fresh and well balanced.
Ideal in combination with cold cuts, with vegetable-based soufflé, salty mousses, molluscs and crustaceans, light fish sauces, fresh or soft cheeses.
