"CHIARAMONTE" FIRRIATO 2017
The Sicilian indigenous grape par excellence shines with a new light in this wine which manifests all the authentic fullness of its fruit. It is a different expression of Nero d'Avola that recalls with personality all the aromatic component of the most important red berried variety of the island. The particular characteristics of the Dàgala Borromeo estate, where this varietal grows, lend themselves to shaping its modern structure and its complex olfactory profile. On the alluvial sandy soils of this plateau, the research conducted by Firriato reaches the highest peaks with a viticulture that is careful to fully reveal the great biodiversity of the heritage of Sicilian native vines. And the Chiaramonte Nero d'Avola is one of the purest manifestations of this philosophy.
Manual harvest in the third decade of September, fermentation at 26 ° -28 ° C for 10 days and then traditionally vinified in red in temperature-controlled stainless steel tanks, 6 months in American oak barrels and in bottle for at least 6 months.
