MAREMMA TOSCANA ROSSO "VIE CAVE" ANTINORI 2018
The Vie Cave of the Marchesi Antinori was born in the vineyards of the Aldobrandesca Farm, in Tuscany, in the Southern Maremma.
It is produced entirely from Malbèc grapes, harvested and selected only by hand. The grapes, de-stemmed and softly pressed, are introduced into stainless steel tanks. Subsequently the grapes are cold macerated with a lowering of the temperature of the product between 5 and 10 ° C, for about 3 - 4 days. The must heats up and is fermented in contact with the skins for about 7 days, at temperatures no higher than 30 ° C. The wine concludes its malolactic fermentation in French barriques. Vie Cave ages in wood for about 10 months after which it is bottled and aged in the bottle for a further 8 months.
Born from careful geological and oenological research aimed at enhancing the potential of a new grape variety for the Italian landscape, Malbec, a grape of French origin that has found a terroir of choice in the "volcanic" Maremma. Balanced, with a marked softness, it embodies all the charm of the production area. The name is dedicated to the Etruscan Vie Cave, deep streets carved into the rock that mark the farm land.
