TOSCANA BIANCO IGT "TAVOLETO" CAMPOTONDO 2022
Il Tavoleto represented a breaking choice and at the same time a challenge; it was a question of reinterpreting a great international grape such as Chardonnay, giving it a personal and territorial imprint.
The vinification begins after pressing and destemming, where a 24-hour pre-fermentation cryomaceration process on the skins begins, ending with the soft pressing of the grapes; alcoholic fermentation in steel follows. It follows the maturation of at least 5 months in steel on its fine lees and bottle aging for at least 3 months.
The temperature range between day and night, the nature of the soil and the sapling breeding combine to give a unique expression of chardonnay. And if the fruit is king among notes of green apple, apricot, peach, citrus and exotic fruits, there is no lack of floral and mineral notes. On the palate it reveals a marked acidity and an almost appetizing savory sensation; the vigorous and balanced structure makes it interesting to taste even after a few years.
