BIANCOSESTO LA TUNELLA 2016
Biancosesto is composed of the two native Friulano and Ribolla Gialla vines. The whole grapes, harvested together, are subjected to cryomaceration at 4 ° C for about 36 hours and then softly pressed. The must thus obtained is statically cold decanted and subsequently added to a fermentation foot previously prepared (3-4 days before) with the best selected grapes of the same vine. It is then subjected to slow fermentation and aging "sur lies" at temperature controlled with frequent batonnage in large Slavonian oak barrels (30 hl). Only after a right last period of rest and refinement in the bottle will it be put to the consumer's judgment. whites. On the palate it enters delicate and full, but agile and savory at the same time. It is a wine with a great personality that in its long finish recalls the typical characteristics of its original vines: the light almond of the Friulano and the fresh sensations of the Ribolla. Excellent wine for the whole meal: as an aperitif or paired with first courses based on mushrooms or fish; also ideal with molluscs, crustaceans and baked fish
