"MANNA" FRANZ HAAS 2021
Franz Haas' Manna presents itself in its youth with golden-yellow notes, while after a few years of maturation intense golden tones appear. Thanks to its particular characteristics, Manna seduces with a complex and layered bouquet that brings back notes of elderberry, pistachios and rose petals. It is striking for its complexity and concentration combined with a soft elegance and a mineral structure. It is a versatile wine, it will never be the same over time, but the different vines always give this wine different notes and the high percentage of Riesling helps to keep it alive over the years. its first release in 1995 in Maria Luisa, is a cuvée of Riesling, Chardonnay, a part of Gewürztraminer and a small percentage of Sauvignon Bianco; with the 2013 vintage a part of Kerner was added by decreasing the percentages of Riesling and Gewürztraminer. The vineyards of the five grape varieties are located at an altitude between 350 and 800 meters. The soils, very different from each other, are of dolomitic, porphyritic, sandy and marly origin and are exposed to the south-west. The grapes, due to the different ripening periods, are harvested and processed separately. Chardonnay and Sauvignon Bianco are fermented in barrique, while Riesling, Gewürztraminer and Kerner ferment in steel tanks. Once fermentation is complete, the young wines are blended to favor the combination and harmonization of the different aromatic components. After a period of stay on the fine lees of about ten months, the wine is bottled and further refined in the bottle for a few months. It is enhanced in combination with noble and precious dishes. The way in which wine adapts to different dishes is fascinating, especially with Japanese cuisine, so sushi and sashimi, constantly renewing itself thanks to its multiple depth and structure
