"PASSOBIANCO" PASSOPISCIARO 2019
Unlike most of the Etna white wines usually produced with the autochthonous Carricante, Passobianco is produced with 100% Chardonnay. Upon his arrival on Etna, Andrea Franchetti planted 4 hectares of Chardonnay, all between 850m and 1000m on the steep terraces of the Contrada Guardiola, where the loose and deep soil is composed of lava ash with a high mineral content. The harvest is carried out meticulously, plant by plant, day after day, tasting the grains to ensure full and homogeneous ripeness of all the clusters, collecting only small portions of the vine per day and continuing the harvest for over two weeks. The result is a rich but fresh, bright but multifaceted wine. Its complexity is due to the combination of specific light conditions, temperature range, high altitude and volcanic soil that are found only on Etna. Chardonnay is well suited to these conditions and over time evolves to give life to a wine with great aging potential, on a par with the great Burgundy whites
