ALGHERO TORBATO "CATORE" SELLA E MOSCA 2018
More than a century ago, two Piedmontese adventurers, the engineer Sella and the lawyer Mosca, looked at uncultivated nature with new eyes, fell in love with her and with her created Sella & Mosca. Catore is the culmination of a long research path on peat that Sella and Mosca has been carrying out for years now. The harvest, carried out by hand in the first days of October, is followed by vinification techniques aimed at enhancing the varietal characteristics with the use of non-invasive and very respectful oenological practices: cold maceration, soft pressing, fermentation at a controlled temperature. It is a wide and enveloping white, with typical hints of Mediterranean scrub, primarily helichrysum, pear and chamomile. After the harvest, usually carried out during the first days of October, the vinification is carried out in a never invasive way, with a view to enhancing all the peculiar characteristics of fruit, season and soil. An aging partly in steel and partly in new barriques completes the picture of a Sardinian white that is truly a masterpiece: it is a Torbato that leaves you breathless. It offers the eye a beautiful bright straw yellow. The nose develops on the typical hints of Mediterranean scrub, with hints of pear and chamomile to follow.
