BLANC DE MORGEX ET DE LA SALLE CAVE MONT BLANC 2020

This Valle d'Aosta DOC is a wine included in the Extreme Wines and Franks Wines projects. The production philosophy of Blanc de Morgex et de La Salle Vini Extremi is based on total respect for characteristics and typicality; that the Pri Blanc grape can bring to a wine still currently produced in prefiloxeric conditions. The production techniques want to re-propose the nineteenth-century winemaking conditions. For this reason the alcoholic fermentation is carried out at room temperature (in the cellar) and the yeasts used were selected in the 1980s by the Experimental Institute of Enology of Asti on the Pri Blanc grape in Morgex. Straw yellow with greenish reflections. It expresses itself on intense shades of fresh fruit, lemon and rock with hints of freshly cut grass. The sip is almost sharp, rich in flavor, savory and well structured. It closes with elegance on mineral and slightly almond notes. Accompanies first and second courses of fish, octopus, squid and seafood with personality. Excellent with baby octopus risotto and barley soup
